Granola is a great breakfast choice, especially if you get it without a lot of added sugar. You can sweeten it with dried or fresh fruits, and have it dry or with and kind of milk (almond milk, rice milk, soy milk, etc).

Edamame (Soy Beans)

Any Japanese restaurant (and many grocery stores) serve cook and lightly salted soy beats. They make a great snack or appetizer. Soy beans are a good source of protein, and like all vegetables, have no cholesterol.

Eggplant Parmesan (no cheese)

This is a great dish filled with flavor, and is available at most any Italian restaurant. It usually comes with cheese (hence the name Parmesan), but if you are looking to avoid dairy, it can be made to order with just the sauce and breading, and usually with a side of pasta.

Angel Hair Pasta

Angel hair pasta is a thin spaghetti that like any pasta, can be made with marinara (tomato) sauce, green pesto sauce, garlic and olive oil, etc. Load it with lots of fresh vegetables including bell peppers, tomato, olives, artichokes, and anything else you like.
