Most chili made without meat tastes better, because people put more effort into using better spices. Some also have stuff added like soy protein, to add a meat-like texture.

Soft Tacos with Tempe

Soft tacos (or hard shell tacos) can be made with fresh lettuce, tomato, beans, rice, guacamole, and you can add tempe (made from soy) for a great meat substitute.

Bean salad of any type is a great food because beans are such a good source of nutrients. A southwest bean salad would have onion,tomato, cilantro and other Mexican food-style seasonings.
