Eggplant Parmesan (no cheese)

This is a great dish filled with flavor, and is available at most any Italian restaurant. It usually comes with cheese (hence the name Parmesan), but if you are looking to avoid dairy, it can be made to order with just the sauce and breading, and usually with a side of pasta.

Angel Hair Pasta

Angel hair pasta is a thin spaghetti that like any pasta, can be made with marinara (tomato) sauce, green pesto sauce, garlic and olive oil, etc. Load it with lots of fresh vegetables including bell peppers, tomato, olives, artichokes, and anything else you like.

Besides pastas with traditional tomato sauces, there are lots of great dishes with sauces like olive oil and garlic, and filled with great vegetables like mushrooms, asparagus, etc.
